Oh, How Pinteresting...

It's funny how a few months can completely change a person. When I think back to last January, living in Florida, I was estatic when the weather finally reached 55 degrees because it meant that I could leave my house in a long sleeve shirt with a coat and a scarf. Now here I am in New York, after 7 months, and I was so freaking hot today! Mother Nature is having an up and down kind of week and we are suffering. On Saturday it was 17 degrees and the ground was covered in  beautiful snow, on Monday it rained ALL DAY, and today the weather reached 53 degrees; I had on so many layers I practically undressed on my way to the subway. Can she make up her mind because I am not a fan of fluctuation.

Now to my pins. This week was random and thus there is no real theme except awesome things I liked. I am excited that for some reason this week, a lot of my real world friends finally joined the Pinterest bandwagon and I love seeing what they pin. I think pinterest is going to help with my birthday and holiday shopping this year!

Cute. Simple. True

These will be on my to do list for room decor :) I love them!

Not that I have any plans to get married in the next few years, but I do love the idea of this picture. It seems like the perfect Save-the-date for a couple who loves board games.

Let's talk nail polish. These colors are pretty fantastic. Let's also talk the Hunger Games. Also, pretty fantastic. Let's talk Hunger Games themed nail polish. I'll take one of each please and thank you!

You've ALWAYS got a friend in me.

I know that given any situation, I have a person (or persons) that I can count on.

If I need to chat for well over an hour on the telephone about nothing, I can call you.

If I need to share information that I am privy to so that we both can laugh, I can send you a text message.

If I need to share a hilarious google search that made me laugh, you will laugh too.

If I need someone to  pick me up at the airport at an upsurd time, you will offer.

If I tell you a secret, you keep it.

If I go crazy, forget everything I know, and need to go to the ER, you will drive me.

If I need to cry, you listen.

If I need someone to bring a blender to a hotel so we can make margaritas, you will.

If I am having a bad day, you remind of an inside joke.

If I need an opinion about an outfit, I can skype you.

If I need to vent, you are there.

and even if we go hours, days, weeks, or months without talking - I know that the second we chat again it is like no time has past - and that is my favorite part about it all.

This post is not just for one friend. This post is to all of my friends that have helped me become the person I am in the last 24 years. I am so happy that I have more than a handful of true friends that I can call on when I need to.

49 Weeks left!

After the short hiatus, it's recipe time again! This weeks recipe is my favorite so far! It was quick, easy, and had so much flavor!

The original recipe comes from Gina over at Skinny Taste but I made a few changes.

Ingredients:
  • 1 bunchof broccolini (baby broccoli)
  • 1 lb lean chicken sausage, removed from casing
  • 1 tsp olive oil
  • 5-6 cloves garlic, chopped
  • 10 oz orecchiette
  • Mozzarella Cheese
Cut broccolini into pieces (I used stems and florets) Bring a large pot of water to boil. When it comes to a boil, add broccolini. Blanch for about 2 minutes, drain and set aside. Re-fill pot with water and salt for the pasta and bring back to a boil. Add pasta and cook according to package directions for al dente.

Then it was sausage time! First I had to remove the casing which was not my favorite job, but it wasn't too dificult. In a large deep sauté pan, brown sausage on medium heat, breaking up into small pieces as it cooks. Since my chicken sausage was plain, I added in some dried basil, garlic powder, salt and pepper, but you can add in any flavors you like. When completely cooked through set aside.

Turn the heat to medium high, add olive oil to the pan; when hot add garlic and cook until golden. Return broccolini to the pan, mix well with the garlic and oil, season with salt and pepper and cook about a minute. Return cooked sausage to the pan and mix well. Drain the pasta.

Then serve the broccolini and sausage mixture over a bed of pasta and top with shredded mozzarella cheese.

Orechiette with Broccolini and Chicken Sausage should be added to your weekly menu this week, I guarantee it's success! I liked it so much I ate the leftovers for lunch and dinner the next day!

It's OK Thursdays!

It's OK...

that I am still talking about that IKEA trip from Monday.

to know that this is the city I am supposed to be in.

that I broke my no spending money rule today.

to love the cold weather, but also not have any idea how to appropriately dress and not be TOO hot or TOO cold.

that New York City has not had a blizzard yet, but I would like 1 sometime this winter.

to hate wearing socks because my feet miss flip-flops.

to eat some chocolate every once in a while. (I mean daily)

to love 90's music and still know all the lyrics.

that rushing Broadway tickets to see Darren Criss didn't work out on Tuesday. It wasn't meant to be.

to be sad that football is basically over, and now I have to listen to people talk about basketball.

to be exhausted. Every freaking day.
